Simple and Delicious Mexican Salsa Recipe

This is one of my favorite salsas I grew up seeing my mom make! It tastes amazing and reminds me of the salsa I used to have with a Chicken Bowl recipe that I recreated from a favorite lunch spot. I used to get this Chicken Bowl from one of my favorite places when I worked over 23 years ago. That dish has now become one of our Top 5 homemade meals that my family must have. Even though this dish has one seasoning “salt”, it packs a punch of flavor from the Chile arbols. And it wouldn’t be the same without this salsa! My mom would put this on the kitchen table daily and it was thrown on anything we were eating. Sometimes a simple recipe can be the best tasting. Whenever my mom comes to visit, I have her make this for us. Even though I make it for my family, I think it’s Gramma’s love that gives it that extra kick and amazing flavor!!  It’s great on anything but also just alone with chips is tasty. My mom reminded me that we used to get cheese sticks and dip them into the salsa and eat them like that!! I would call that Mexican mozzarella sticks 😂! Fun Warning: When making this salsa, it can produce a coughing sensation…what that means is that you’re doing it right! 😂 Growing up and coughing out of the blue, we knew our mom was making her salsa!! Enjoy this salsa that clearly can be used in any dish.

Simple and Delicious Mexican Salsa Recipe

INGREDIENTS:

  • Chile Arbol

  • Tomatillos (small, about 20) (large, about 10)

  • 4 Roma Tomatoes

  • Real Salt (start off slow and add as you taste)

  • Water *optional

EQUIPMENT:

  • Blender

  • Glass bowl/Jar

  • Small flat pan (nonstick)

 Instructions:

1. Add a handful of Chile arbol and cook over medium heat until they get a bit charred. Set aside.

2. Add the tomatillos and Roma tomatoes. Let these char for a bit on each side. Then cover and steam and cook until they are skin-soft and splitting open a bit. Occasionally turning/moving them around during the steaming process helps them cook evenly.

3. Add the cooked Chile arbol to the blender first and pulverize.  Next, add the tomatoes and tomatillos, and blend well. If it’s too thick you can add some water (not a lot – add a little bit at a time).

4. Pour into a glass bowl/jar and season with salt. Adjust to your liking.
